Instructions

For the Cake

  1. Preheat the oven: Set to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Mix dry ingredients: In a large bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Combine wet ingredients: In another bowl, whisk buttermilk, vegetable oil, eggs, and vanilla. Gradually add the wet mixture to the dry ingredients, mixing until smooth.
  4. Add boiling water: Stir in the boiling water. The batter will be thin—this is normal!
  5. Bake: Divide the batter evenly between the prepared pans. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool: Allow cakes to cool in pans for 10 minutes, then transfer to a wire rack to cool completely.

For the Frosting

  1. Beat softened butter until creamy.
  2. Gradually add powdered sugar, cocoa powder, and salt. Mix on low until combined.
  3. Add heavy cream and vanilla extract. Beat on high speed until fluffy. If needed, adjust the consistency with more cream.

Assemble the Cake

  1. Place one cake layer on a serving plate. Spread an even layer of frosting on top.
  2. Add the second layer and frost the top and sides of the cake.
  3. Decorate with sprinkles, shaved chocolate, or fresh berries if desired.

Notes

  • Substitute hot coffee for boiling water in the cake batter for a richer flavor.
  • This frosting can also be used for cupcakes!
